Decaf Assam Tea
In 1835 the first cultivated tea plants were planted in India, specifically in Assam. With rich soil and monsoon rains Assam is one of the worlds most prolific tea producing regions. Harvest runs from April to November. The second flush is the sweet spot, harvested from May to June it has the benefit of the monsoon season and is bursting with flavour as a result. That's when this tea is picked. You may not recognise the name Assam, but this tea often forms the base of English breakfast blends and Masala chai.
This tea is decaffeinated using the CO2 method which uses pressurised carbon dioxide to gently bind with the caffeine in the leaf and remove it. This process is more arduous than some but helps to preserve the flavour of the tea.
Serving Suggestion: Dan drinks his with milk and 1 sugar. Liza lets hers brew a bit longer for a more punchy flavour.
