While visiting his temple the farmer responsible for growing this wonderful oolong was asked what his special tea should be named. He looked at the iron statue of Kuan Yin that stood in front of him, and named it in honour of the goddess of mercy herself. The quality of the tea is such that we don't think any divine being would mind the comparison.
Oolong teas are semi-oxidised or fermented, making them an excellent middle ground between green and black teas. Slightly more complex and full-bodied than green, yet lighter and more vibrant than black. This leads to some truly unique flavour experiences. This tea strikes a wonderful balance between light and refreshing orchid flower sweetness, and a mild yet noticeably complex mineral rich aftertaste.
During brewing, these expansive leaves unfurl in a beautiful, transformative way. If you can use a glass teapot, or gaiwan, that will let you see this magic happen. If brewing by the cup Liza likes to use 80 degree water for 2 min when brewing by the cup. To get the most out of this tea Dan recommends brewing Gong Fu Style. You can get 10-15 brews out of 5g of this tea by brewing it in this way.
