Although in England in 1900 nearly 90% of the tea drunk was Indian, it was rare for the Indian population to consume tea themselves. The British owned Indian tea Association hit upon a marketing campaign that introduced the idea of a tea break into Indian factories. The Indian worker's quickly altered the traditional british drink into this wonderful beverage. While riding the rails in India, the call of the chai wallah can be heard at every stop offering their delicious wares. The chai arrives in small clay cups that customers throw from the train windows when finished!
Indian chai is typically made using a rich black tea, and brewing it in heavy milk with spices. The drink produces a warm soothing effect and engenders a wonderfully calming effect on the body.
Serving Suggestion: Adrien enjoys this as a Chai latte by adding steamed milk to a very strong brew. Liza drinks hers black. For iced drinks either cold brew overnight or brew as for hot but use more tea leaves to make a more intense flavour
